After an initial still base wine is created, the wine is bottled with a small addition of yeast and sugar to trigger a second fermentation inside the bottle. This produces the fine, persistent bubbles characteristic of high-quality sparkling wine, while building the complexity, depth, and toasty character that distinguish traditional method wines from simpler tank-fermented styles. It is a labour-intensive process that reflects the quality and ambition of Silverhand's winemaking.
