    Vinification

    Saint-Roux experiments with several grape varieties in the Mediterranean region and delivers 'Pigeonnier' - a cuvée with mixed origins. The blend of grape varieties gives originality and intensity. Carefully worked, the grapes are harvested when mature, during the night, to preserve their freshness. Gentle pressing and good settling refine the silhouette of the wine. The slow fermentation at controlled temperatures, with indigenous or selected yeasts, ensures aromatic diversity. Aging for a few months on fine lees perfects the balance on the palate.
