The Charmat method — also known as the tank method, bulk method, or Martinotti — is a sparkling wine production technique where the second fermentation (the process that creates the bubbles) takes place in large, sealed stainless-steel tanks, rather than in individual bottles as in the traditional method used for Champagne. This approach is faster and more economical than bottle fermentation, and is particularly well suited to preserving fresh, vibrant fruit aromas — making it the ideal method for the bright, easy-drinking character of Harlot's English sparkling wines.
