    This organic wine is excellent as an aperitif or alongside richer flavoured dishes such as olive tapenade or red mullet.

    SERVING ADVICE

    Ideal tasting temperature 10°C.
    Tip: Rather than putting your rosé in the fridge, put your rosé in an ice bucket with water and ice cubes.

    VINIFICATION

    Le Pigeonnier, from the Saint-Roux farm, is an organic but modern version of Provençal rosé. The wide range of grape varieties gives it a certain consistency and regularity, vintage after vintage. Its freshness in colour and on the nose is due to the patient work of nocturnal harvesting, followed by long cold stabling to maximise the contribution of the lees. Finally, after the harvest, the juices are heated for fermentation between 14 and 18°C, to promote the variety of aromatic expressions. Aging for a few months on fine lees precedes bottling at the end of winter.
